1. Extra Virgin Olive Oil — Free from Defects
To be classified as “Extra Virgin,” an olive oil must meet the following standards:
Our oil comes from the Galega variety — a traditional Portuguese olive, harvested at full ripeness rather than green, known for its soft, balanced, and lingering aromas.
Unlike oils made from green olives (often more bitter and pungent), Galega olive oil develops riper, rounder, fruitier notes — while still retaining a highly valuable richness in antioxidants.
Polyphenols are natural antioxidants essential to good health. They give olive oil its pungency (that slight throat tingling) and contribute to its shelf life.
Our polyphenol level: 606 mg/kg
An exceptionally protective oil — well above the average for extra virgin olive oils (> 350 mg/kg).
Galega olive oil reveals a ripe fruitiness, with notes of black olive, sweet almond, and occasional hints of dried fruits or apple. It offers: A moderate yet noticeable pungency — a sign of freshness and high polyphenol content. A gentle, non-aggressive bitterness. A smooth, silky texture that coats the palate. An ideal oil for both gourmet pleasure and well-being.
Our olive trees are grown in natural conditions, without irrigation, on dry and living soils. This natural water stress leads the trees to produce fewer fruits — but ones that are richer in nutrients.
